How to make a coriander chutney & veggie sandwich! This a family recipe and a usual dinner.
- coriander leaves
- shredded coconut
- green chillies (2 small ones)
- ginger or garlic
- half a lemon
- green peppers
You will need a handful of coriander leaves, 4 to 5 tablespoons of shredded coconut, 2 small green chillies, salt to taste, a small piece of ginger or garlic for making the chutney. Grind them up to make the chutney paste. Once that is done, squeeze half a lemon rind to the paste. Then slice up the onion, cucumber, tomato, carrot and green pepper.
Spoon the coriander chutney onto slices of bread (toasted or fresh as per your choice) and add the veggies onto them. My own technique is to spread the chutney onto two slices of bread and add in order – 3 onion pieces, 2 tomatoes, 4 small carrot slices & 2 long green peppers slices. Add a dash of pepper and you are ready to go!
